Uncooked Raspberry Jam

This jam has a gorgeous flavour and can be kept for 3-6 months, depending on conditions. The colder the better! No other fruit can be used in this way.

Ingredients

1 kg (2lb) ripe raspberries
1 kg (2lb) sugar
a little brandy


Put the raspberries and sugar, in separate bowls, in a preheated moderate oven, 180°C (350°F), Gas mark 4, for about 20 minutes or until they are both really hot. Add the sugar to the raspberries and beat the two together until the sugar has dissolved. Pour into hot sterilised jars and leave to cool.


Brush a little brandy on the waxed side of each ham cover and finish in the usual way.


Makes about 1.75kg (4lb)


NOTE: if larger quantities of fruit and sugar are put into the bowls, increase the heating time to 30 minutes.
